Double Chocolate Cupcakes
(Yields 14 cupcakes)
Cupcake:
1½ cup Flour
1 cup Sugar
1 cup Buttermilk
½ cup Peanut oil
1/3 cup Cocoa powder
1 tsp Baking powder
1 tsp Salt (finely ground)
1 tsp White distilled vinegar
Mix all ingredients. Line a muffin pan with cupcake liners and fill with batter. Bake at 350 degrees for 25 minutes.
Frosting:
½ lb Powdered sugar
¼ cup Cocoa powder
3 tbsp Butter
2 tbsp Milk
1 tsp Vanilla
¼ tsp Salt
Mix all ingredients and cook over a double boiler until mixture comes together. Cool and spread on top of cupcakes. Enjoy!
